We have a super busy day today, so I am simply going to post the fabulous strawberry-rhubarb pie recipe that we used yesterday. My rhubarb has grown so wonderfully all spring and I had enough to make rhubarb-apple crisp on Tuesday and then then the pie last night. There isn't anything tricky to either recipe, but I've heard from a friend of mine that one of her favorite pies is strawberry-rhubarb! Both were delicious (but I wouldn't know because I couldn't have any last night- gestational diabetes). We served the crisp with a small scoop of vanilla ice cream. The pie stood on it's own, but would also be delicious with some fresh whipping cream!
